RECIPE

Vegan Sorghum Buddha Bowl
Equipment
- Saucepan or Rice Cooker For cooking the sorghum
- Baking Sheet For roasting the mixed vegetables.
- Skillet or Frying Pan To sauté the chickpeas.
Ingredients
- 1 cup cooked sorghum
- 2 cups mixed roasted vegetables (e.g., sweet potatoes, broccoli, carrots)
- 1 cup cooked chickpeas
- 1 ripe avocado, sliced
- 2 tbsp tahini dressing (store-bought or homemade) I use Annie's Goddess dressing
- Salt and pepper, to taste
- Fresh lemon wedges for garnish (optional)
Instructions
Prepare the Sorghum
- If you haven't already, cook the sorghum according to the package instructions. 3 cups of water, 1 cup of sorghum and simmer for 45-60. minutes. It should be tender but still have a bit of chewiness. Once cooked, let it cool slightly.
Roast the Vegetables
- Preheat your oven to 400°F (200°C).Toss the mixed vegetables with a drizzle of olive oil, salt, and pepper on a baking sheet.Roast in the preheated oven for about 20-25 minutes or until they are tender and slightly caramelized. You can also add your favorite seasonings.
Prepare the Chickpeas
- Drain and rinse the cooked chickpeas.In a skillet, heat a little olive oil over medium-high heat.Add the chickpeas and sauté for 5-7 minutes until they become slightly crispy. You can season them with a pinch of salt and your preferred spices.
Assemble the Buddha Bowl
- In individual bowls, start with a base of cooked sorghum.Arrange the roasted vegetables, sautéed chickpeas, and avocado slices on top of the sorghum.Drizzle the tahini dressing over the bowl. You can adjust the amount to your taste.Season the Buddha bowl with salt and pepper to taste.Optionally, squeeze fresh lemon juice over the top for an extra burst of flavor.Serve the Vegan Sorghum Buddha Bowl immediately while it's still warm.
