At some point, I will do a comprehensive review and compare many gluten-free breads. But for now, here is my my current favorite gluten-free bread: Simple Kneads sourdough. Why do I love it? It’s lovely sourdough flavor and it’s clean ingredients. It’s made with ancient grains like millet, sorghum, and buckwheat—ingredients that seem to sit better in my gut than a lot of other gluten-free flours. It’s fermented, which makes the bread easier to digest. Before, I was mowing down an oat flour-based bread that is baked locally (and f-ing delicious). But (ta-da!) it didn’t sit well in my gut. I’ve been hearing about how often folks who are sensitive to gluten are also sensitive to oats, even though oats are gluten-free. It might be the high fiber, high lectin, or high glyphosate (roundup) concentrations. I don’t know. I just know my anecdotal experience. I had been ordering Simple Kneads online but recently spotted it at Sprouts (my local grocery store). I love Spouts – they are always playing music from my formative years. Like they homing me in with their 80s tunes. Are they specifically marketing to my age group because we have the highest earning / buying power? So fleeting – in a few years they will be playing bad 90s music.
