It has taken long time for me to accept this gluten intolerance. I have this mentality that I will get to a place where I can have a little bit. And maybe that is true to a very small degree. I went out of town a few weeks ago with some friends. One couple was in charge of cooking dinner on Friday and they make homemade pizzas. Another couple was in charge of dinner on Saturday and it was lasagna. I didn’t give warnings about my gluten issue (nor would I want them to change plans for me!). I also didn’t bring back up dinner for me (for example, gluten free pasta). So I didn’t have much choice. Plus, I really wanted these carefully prepared delicious meals. I ate them both, along with some pie with wheat flour. I kind of felt okaaaay …until Sunday. Sunday brought on mild tummy discomfort and major upper back muscle aches. I don’t know if the aches were from the gluten, but I sense it was. I feel like I have made that connection before. I just didn’t feel right for a few days. And it’s not just the annoying symptoms I think about. I worry about what going on inside – am further damaging my gut lining? How else is this inflammation affecting my insides? Going out to dinner when the rolls show up is hard. Going to a weekend outing with only gluten is served is hard. When my husband takes his chocolate chip cookies out of the oven, its hard. And I get into this mentality of “a little is fine” – “I should be able to have some like everyone else” – “Maybe my gut lining is healed and I can handle it now”. But so often, it just isn’t fine. I will say this: Since gluten-filled weekend 3 weeks ago, I’ve been so strict with the no gluten, and I absolutely appreciate feeling normal, healthy, zero tummy or other inflammation issues.
