  • Add the dry ingredients to the butter mixture and mix until a soft dough forms.
  • Let the dough rest for 10 minutes so the gluten-free flour can hydrate.
  • In a small bowl, mix the cinnamon and sugar together.
  • Roll the dough into 1-inch balls, then roll each ball in the cinnamon sugar mixture.
  • Place cookies on the baking sheet about 2 inches apart.
  • Bake for 9–11 minutes, until the edges are set and the tops are lightly crackled. (centers will be soft)
  • Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack. (they will firm up)
