NUTRITION
Gluten-Free All-Purpose Flour Mix: Gluten-free flour blends typically consist of various flours, such as rice, tapioca, and potato flour, providing carbohydrates, some fiber, and minimal protein. They are often enriched with vitamins and minerals to mimic the nutritional content of wheat flour. King Arthur’s Measure for Measure Flour is an excellent option.
Active Dry Yeast: Yeast is a source of protein and contains B vitamins like niacin and folate. It plays a crucial role in dough rising by fermenting sugars into carbon dioxide gas, causing the dough to expand.
Sugar: Sugar contributes primarily empty calories and carbohydrates, providing sweetness to the dough. In this recipe, it also acts as food for the yeast during the proofing process.
Salt: Salt adds flavor and enhances dough structure by regulating yeast activity. It contains sodium, which is an essential mineral for maintaining fluid balance and nerve function in the body.
Xanthan Gum: Xanthan gum is a common gluten replacement in gluten-free recipes. It is a soluble fiber and thickening agent that helps improve the texture and binding of gluten-free doughs and batters.
Olive Oil: Olive oil is a source of heart-healthy monounsaturated fats and provides calories to the dough. It also contributes to the dough’s texture and flavor.
Apple Cider Vinegar: Apple cider vinegar contains acetic acid, which adds a mild tangy flavor to the dough. It may have potential health benefits, including aiding digestion and stabilizing blood sugar levels, but it is used in small quantities in this recipe for flavor and acidity.
SUBSTITUTIONS
Gluten-Free All-Purpose Flour Mix: If you have specific dietary preferences or allergies, you can choose a different gluten-free flour blend. Some options include rice flour, almond flour, or chickpea flour. Keep in mind that different flours may yield slightly different textures.
Active Dry Yeast: If you prefer not to use yeast, you can explore yeast alternatives like baking powder or baking soda. Keep in mind that the rising process and flavor may vary with these substitutions.
Sugar: If you want to reduce sugar or prefer a different sweetener, you can substitute with honey, maple syrup, agave nectar, or a sugar alternative like stevia. Adjust the quantity to taste.
Salt: If you’re watching your sodium intake or prefer a different type of salt, you can use sea salt, kosher salt, or a low-sodium salt substitute. Just be aware that the taste may vary slightly.
Xanthan Gum: Xanthan gum is often used in gluten-free recipes to improve texture. If you don’t have xanthan gum or prefer not to use it, you can try guar gum or omit it altogether. The texture may be different, but it can still be enjoyable.
Olive Oil: Any cooking oil of your choice, such as vegetable oil, canola oil, or avocado oil, can replace olive oil in the recipe. Different oils may add subtle variations in flavor.
Apple Cider Vinegar: If you don’t have apple cider vinegar, you can substitute it with white vinegar or lemon juice. These alternatives can provide the required acidity for the dough.

- 2 tbsp olive oil
- 1 tsp apple cider vinegar
Instructions
Activate the Yeast
- In a small bowl, combine the warm water and sugar. Stir until the sugar dissolves.
- Sprinkle the yeast over the water mixture and let it sit for about 5 minutes, or until it becomes frothy.
Prepare the Dough
- In a large mixing bowl, combine the gluten-free flour mix, xanthan gum, and salt.
- Make a well in the center of the dry ingredients and pour in the activated yeast mixture, olive oil, and apple cider vinegar.
- Stir the ingredients together until a soft dough forms.
Knead the Dough:**
- Turn the dough out onto a clean, lightly floured surface. Use additional gluten-free flour mix as needed to prevent sticking.
- Knead the dough for about 2-3 minutes until it becomes smooth and elastic.
Preheat and Bake
- Preheat your oven to 425°F (220°C).
- Place the rolled-out dough (still on parchment paper) onto a baking sheet or pizza stone.
- Bake the crusts in the preheated oven for 8-10 minutes or until they start to firm up and turn golden around the edges.
Add Toppings and Finish
- Remove the partially baked crusts from the oven.
- Add your favorite gluten-free pizza sauce, cheese, and toppings.
- Return the pizzas to the oven and bake for an additional 4-5 minutes, or until the cheese is melted and bubbly.
Slice and Serve
- Allow the pizzas to cool for a few minutes, then slice and serve hot.
