Gluten-Free Chicken Piccata

Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 cup gluten-free all-purpose flour
- 2 large eggs
- 1 cup gluten-free bread crumbs (I like Nathan Creations Chef Gourmet Panko Plain Gluten Free)
- 3 tbsp tablespoons olive oil
- 1/4 cup fresh lemon juice
- 1/2 cup chicken broth
- 1/4 cup capers, drained
- 2 tbsp unsalted butter
- 2 tbsp fresh parsley, chopped
Instructions
- Start by preparing the chicken breasts. Place each chicken breast between two sheets of plastic wrap or parchment paper and gently pound them to an even thickness. Season both sides with salt and pepper.
- In three separate shallow bowls, set up your breading station. In the first bowl, place the gluten-free flour. In the second bowl, beat the eggs. In the third bowl, add the gluten-free bread crumbs.
- Dredge each chicken breast in the flour, shaking off any excess. Dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken with the bread crumbs, pressing gently to adhere
- In a large skillet, heat olive oil over medium-high heat. Add the breaded chicken breasts and cook until golden brown and cooked through, about 4-5 minutes per side. Transfer the cooked chicken to a plate and set aside.
- In the same skillet, add lemon juice, chicken broth, and capers. Bring to a simmer, scraping up any browned bits from the bottom of the pan. Let it cook for 2-3 minutes to reduce slightly
- Remove the skillet from heat and swirl in the butter until melted. This will create a smooth and slightly creamy sauce.
- Place the cooked chicken back into the skillet, turning to coat with the lemon-caper sauce.
- To serve, place a chicken breast on each plate, spooning some of the sauce over the top. Garnish with chopped parsley.
